Our Mission.

Grotto Meats is inspired to create the finest hand-crafted charcuterie to reflect and preserve the beauty of Montana.

As one of the only charcuteries in Montana, we turn the highest quality local meat into Old World style dry cured sausages and whole muscle charcuterie. Creating delicious new takes on classic flavors with local ingredients and a chef’s ingenuity, Grotto Meats preserves the best of Montana in every bite. Our “grotto” is tucked in the basement of the historic Bon-Ton Flour Mill building behind our food truck in Bozeman, MT, and houses a custom climate controlled curing chamber. Partnering with local distributors to procure the finest local meat, we take great care in sourcing sustainable, pastured pork, and each batch is hand-crafted with love and expertise by a small staff.

Just ate Grotto charcuterie last night at our camp site. Probably helped us survive a possible crisis. Tim accidentally locked our van after dark with just about all our warm clothes. We had a small fire already going but not anyway to call people and too far to walk to the nearest farm. That meat gave the energy needed for wood gathering etc. Did I mention nobody came by until 8:15 am the next morning. Grateful that we stayed warm.

THEE absolute best charcuterie I have ever had the pleasure of eating. I think the duck prosciutto is actually the singular best thing I’ve ever tasted (and believe me, I eat A LOT). 										 Charcuterie

What is Charcuterie?

Charcuterie, refers to meat (usually pork) that has been preserved using the ancient method of dry-curing. This includes whole muscle charcuterie, like capicola or prosciutto, which is a larger cut that has been salted and hung to dry-cure, or a cured sausage, such as salami, that has been mixed with curing salts, herbs, and spices, and introduced to specific, edible molds to create distinct flavors. Since meat that has been processed this way is good for many years, it was a common way to preserve meat in a time before refrigeration. Like many food traditions, this art was born out of necessity.

All of our dry-cured meats are hung in our special climate-controlled curing chamber (our "Grotto") that helps the meat to dry in order to inhibit the growth of bacteria. This mimics the environment of the ancient caves where the art and science of curing was born.
